The short answer
At a glance

Day one ends at counter height
Three nights in San Sebastián, arranged around the hours the city is actually at its best – which are earlier in the morning and later in the evening than most people plan for.
Destination overview
A city of about a hundred and ninety thousand on the Atlantic coast of the Basque Country, wrapped around a shell-shaped bay with a hill at each end. Everything in this route is walkable except the two excursions, and the whole old town is fifteen streets across. Bilbao airport is an hour and a quarter by road; Biarritz is forty-five minutes.

Opening scene
It is nine in the evening on a Tuesday and you are standing at a counter on Calle Pescadería with a glass of txakoli in one hand, having just eaten something on a slice of bread that you cannot name and will think about for a year. There is no table. There was never going to be a table. In twenty minutes you will pay, walk forty metres, and do it again somewhere else. This is the whole trip, and nobody who comes here for the first time quite believes how good it is until they are in it.
The ask
Usually: three nights, often tacked on to a few days in Bilbao or Rioja, and almost always from someone who has heard this is the best eating city in Europe and is slightly worried that it will turn out to be a queue. The brief underneath is nearly always the same – they want one great restaurant, they want to understand the bars properly rather than guess, and they do not want to spend the trip anxious about bookings.
So that is what this does. One table that matters, one evening with someone who knows the bars, and enough unplanned time that the city can do what it does.
